Almond Butter cookies are made with real almond for a crunchy, nutty taste. They are rich and delicious, and very simply to make. This cookie recipe would be perfect to make with your kids! If you don’t like almonds, try walnuts or pecans for a different flavor.
Ingredients
- 1 cup buter
- 1/2 cup sugar
- 1 cup finely chopped almonds (with skins)
- 2 tsp. vanilla
- 2 cup all-purpose flour
Instructions
- Heat oven to 350.
- Cream together butter and sugar.
- Blend flour into butter mixture using a pastry mixer (your blender may have the proper attachments).
- Using about a level teaspoonful, form dough into small balls.
- Place balls onto ungreased cookie sheet.
- Using a flat bottom glass, grease the bottom of the glass, dip into sugar and then flatten each ball.
- Bake for 9 to 10 minutes, or until slightly browned.
Makes approximately 6 dozen cookies
