Almond Graham Thins

These delicious cookies are very easy and quick to make- perfect when you need a quick desert to take to a holiday get together or office party. Almond Graham Thins are also a great cookie to make with your kids on a rainy day. Be creative and try cinnamon or chocolate graham crackers instead of the honey for a different, yet yummy, taste!

Ingredients

  • 1 box honey graham crackers
  • 2 3/4 oz. sliced almonds
  • 1/2 cup margarine
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 350.
  2. Break graham crackers on perforations. Place crackers onto cookie sheets
  3. Sprinkle almonds over crackers evenly.
  4. In a saucepan, boil margarine, butter, sugar and vanilla for two minutes.
  5. Gently spoon melted mixtures over crackers and almonds.
  6. Bake cookies for 10 minutes.
  7. While cookies are baking, lay out a sheet of foil or wax paper (sprayed with non-stick spray) on which to cool cookies.
  8. When cookies are done baking, remove cookies immediately from cookie sheet and place on foil or wax paper to cool.

Makes several dozen cookies- amount depends on whether you break graham crackers into halves or quarters.

Note:  You can replace the almond with any nut of your choosing. Try pecans!
