Applesauce Cookies


These Applesauce Cookies are fun to make. They have a delightful apple flavor with a hint of coffee. I usually leave out the nuts, but that’s just a personal preference. Some like to lightly ice these cookies with a fresh Lemon Butter Icing for added flavor.

Ingredients

  • 1 cup shortening
  • 2 cups packed brown sugar
  • 2 eggs
  • 1/2 cup cold coffee
  • 2 cups applesauce (use thick, well-drained)
  • 3 1/2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. ground cloves
  • 1 cup raisins
  • 1/2 cup chopped nuts

Instructions

  1. In a medium bowl, mix together flour, baking soda, salt, and spices.
  2. In a large bowl, thoroughly blend together shortening, sugar, and eggs.
  3. Mix in applesauce and coffee, making sure to blend well.
  4. Slowly stir in flour mixture.
  5. Stir in nuts and raisins.
  6. Chill dough at least 2 hours.
  7. Heat oven to 400.
  8. On a lightly greased cookie sheet, place rounded teaspoonfuls of dough approximately 2″ apart.
  9. Bake cookies 9 to 12 minutes, or until no imprint remains when lightly touched.

Makes 7 to 8 dozen cookies

Note: When cookies are cool, you can ice them with a light icing, such as the Lemon Butter Icing.
