These Applesauce Cookies are fun to make. They have a delightful apple flavor with a hint of coffee. I usually leave out the nuts, but that’s just a personal preference. Some like to lightly ice these cookies with a fresh Lemon Butter Icing for added flavor.
Ingredients
- 1 cup shortening
- 2 cups packed brown sugar
- 2 eggs
- 1/2 cup cold coffee
- 2 cups applesauce (use thick, well-drained)
- 3 1/2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1 tsp. ground cloves
- 1 cup raisins
- 1/2 cup chopped nuts
Instructions
- In a medium bowl, mix together flour, baking soda, salt, and spices.
- In a large bowl, thoroughly blend together shortening, sugar, and eggs.
- Mix in applesauce and coffee, making sure to blend well.
- Slowly stir in flour mixture.
- Stir in nuts and raisins.
- Chill dough at least 2 hours.
- Heat oven to 400.
- On a lightly greased cookie sheet, place rounded teaspoonfuls of dough approximately 2″ apart.
- Bake cookies 9 to 12 minutes, or until no imprint remains when lightly touched.
Makes 7 to 8 dozen cookies
Note: When cookies are cool, you can ice them with a light icing, such as the Lemon Butter Icing.
