If you like Cadbury Eggs, you’ll like these fun Chocolate Easter Eggs. Everyone will be amazed that you actually handmade these yummy cookies that look like real eggs in the center (well, like cookie eggs anyway)!
Ingredients
- 1 cup softened butter
- 10 cups confectioner’s sugar
- 4 tsp. vanilla
- 1 can sweetened condensed milk
- 2 tsp. salt
- 1 lb. semi-sweet chocolate
- 1 tsp. yellow food coloring
Instructions
- In a large bowl, mix together butter, salt, and vanilla until light & fluffy.
- Blend in milk.
- Slowly add in confectioner’s sugar. Mix until stiff
- Dust dough with confectioner’s sugar and knead with hands until smooth.
- Set aside approximately 2/3 of dough.
- Knead yellow food coloring into remaining 1/3 of dough.
- Roll yellow dough into 24 small balls.
- Divide uncolored dough into 24 equal parts, and mold around yellow dough balls to form an egg shape.
- Allow cookies to dry at room temperature on paper towels for 24 hours.
- Melt chocolate in a double boiler until smooth.
- Carefully dip dried cookies into chocolate.
- Place cookies onto cooling rack lined with wax paper.
- Allow chocolate to harden.
Note: Keep these cookie refrigerated until ready to eat!
