Chocolate Oatmeal refrigerator cookies are sure to please everyone. They aren’t too chocolaty and have a wonderful texture given by the oatmeal. They are a perfect compliment to a summer barbeque or a winter holiday dinner.
Ingredients
- 1/2 cup shortening
- 1 cup packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. almond extract
- 2 squares unsweetened chocolate (2 oz.), melted
- 1 cup all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup rolled oats
- 1/2 cup chopped nuts (any kind, but walnuts make for good flavor)
Instructions
- In a large bowl, thoroughly mix together shortening, sugar, egg, and flavorings.
- Slowly stir in dry ingredients, blending well.
- Mix in rolled oats and nuts.
- Mold dough into a roll approximately 1 1/2″ in diameter.
- Wrap tightly in waxed paper. Chill for several hours, or even better, overnight.
- Heat oven to 350.
- Slice dough into pieces approximately 1/4″ thick.
- Place cookies approximately 1″ apart onto ungreased cookie sheet.
- Bake cookies for 10 to 12 minutes.
Makes approximately 4 dozen cookies
Note: Use a thin, sharp knife to slice cookies cleanly.
