Chocolate Oatmeal Refrigerator Cookies


Chocolate Oatmeal refrigerator cookies are sure to please everyone. They aren’t too chocolaty and have a wonderful texture given by the oatmeal. They are a perfect compliment to a summer barbeque or a winter holiday dinner.

Ingredients

  • 1/2 cup shortening
  • 1 cup packed brown sugar
  • 1 egg
  • 1 tsp. vanilla
  • 1/2 tsp. almond extract
  • 2 squares unsweetened chocolate (2 oz.), melted
  • 1 cup all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup rolled oats
  • 1/2 cup chopped nuts (any kind, but walnuts make for good flavor)

Instructions

  1. In a large bowl, thoroughly mix together shortening, sugar, egg, and flavorings.
  2. Slowly stir in dry ingredients, blending well.
  3. Mix in rolled oats and nuts.
  4. Mold dough into a roll approximately 1 1/2″ in diameter.
  5. Wrap tightly in waxed paper. Chill for several hours, or even better, overnight.
  6. Heat oven to 350.
  7. Slice dough into pieces approximately 1/4″ thick.
  8. Place cookies approximately 1″ apart onto ungreased cookie sheet.
  9. Bake cookies for 10 to 12 minutes.

Makes approximately 4 dozen cookies

Note: Use a thin, sharp knife to slice cookies cleanly.
