I like to call these “Ande’s Cookies” because of their delighful minty, chocolate flavor. These Chocolate Peppermint Cookies are like peppermint Oreo’s- and who doesn’t like those?
Ingredients
- 1/2 cup shortening
- 1/2 cup sugar
- 1 egg
- 3 tbsp. milk
- 2 squares unsweetened chocolate (2 oz), melted
- 1 3/4 cups all purpose flour
- 1 tsp. salt
- 1/2 tsp. baking powder
Instructions
- In a large bowl, blend together shortening, sugar, and egg.
- Mix in milk and cooled (melted) chocolate.
- Blend together flour, salt, and baking soda. Stir slowly into shortening mixture.
- Mold dough into a smooth roll, approximately 2″ in diameter.
- Wrap roll in wax paper. Chill until firm (overnight is best).
- Heat oven to 400.
- Slice dough roll into sections about 1/8″ thick.
- Place onto a lightly greased cookie sheet.
- Bake 10 to 12 minutes.
- Cool thoroughly on rack.
- Using two cookies, make a sandwich with a generous helping of filling (see below).
Peppermint Filling
- 3 tbsp. cream (12% butterfat)
- 1/4 tsp. peppermint extract
- 2 cups confectioner’s sugar
- Blend cream and peppermint extract into confectioner’s sugar.
Note: For fun, you can tint the filling with food coloring. I like green!
