I like to call these “Ande’s Cookies” because of their delighful minty, chocolate flavor. These Chocolate Peppermint Cookies are like peppermint Oreo’s- and who doesn’t like those?

Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 3 tbsp. milk
  • 2 squares unsweetened chocolate (2 oz), melted
  • 1 3/4 cups all purpose flour
  • 1 tsp. salt
  • 1/2 tsp. baking powder

Instructions

  1. In a large bowl, blend together shortening, sugar, and egg.
  2. Mix in milk and cooled (melted) chocolate.
  3. Blend together flour, salt, and  baking soda. Stir slowly into shortening mixture.
  4. Mold dough into a smooth roll, approximately 2″ in diameter.
  5. Wrap roll in wax paper. Chill until firm (overnight is best).
  6. Heat oven to 400.
  7. Slice dough roll into sections about 1/8″ thick.
  8. Place onto a lightly greased cookie sheet.
  9. Bake 10 to 12 minutes.
  10. Cool thoroughly on rack.
  11. Using two cookies, make a sandwich with a generous helping of filling (see below).

Peppermint Filling

  • 3 tbsp. cream (12% butterfat)
  • 1/4 tsp. peppermint extract
  • 2 cups confectioner’s sugar
  1. Blend cream and peppermint extract into confectioner’s sugar.

Note: For fun, you can tint the filling with food coloring. I like green!
