Chocolate Pinwheels are a fun cookie for kid’s parties or more sophisticated events, like a bridal shower. These are stylish, tasty, and easier to make than they look. Start with a basic sugar cookie recipe, and in no time you’ll have a cookie everyone will love!
Ingredients
- 3/4 cup shortening
- 1 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 2 1/2 cups all-purpose flour
- 1 tsp. baking powder
- 1 tsp. salt
- 2 squares unsweetened chocolate (2 oz)
Instructions
- Melt chocolate using a double boiler (or a saucepan inside another that has water in it). Allow chocolate to cool, but not solidify.
- In a small bowl, blend together flour, baking powder, and salt. Set aside.
- In a large bowl, mix shortening, sugar, eggs, and vanilla thoroughly until smooth.
- Stir flour mixture into shortening mixture and blend well.
- Divide dough into two equal parts.
- Blend one part with melted chocolate.
- Refrigerate chocolate dough while you work with other half.
- Roll remaining dough (the non-chocolate dough), into an oblong shape, approximately 12×9″.
- Roll chocolate dough into the same shape and size.
- Lay the chocolate dough onto the white dough.
- Roll doughs together until about 1/4″ thick.
- Roll dough again, starting at the wide end and rolling tightly.
- Chill dough again for several hours or overnight.
- Heat oven to 400.
- Cut dough into slices approximately 1/8″ thick.
- Place slices onto ungreased cookie sheet.
- Bake 8 to 10 minutes.
Makes approximately 7 dozen cookies
