Lemon Squares are perfect for a spring day. These easy bar cookies are my Mom’s favorite. They are light, lemony, delicious, and easy to make!
Ingredients
- 1 cup all purpose flour
- 1/2 cup butter or margarine
- 1/4 cup confectioner’s sugar
- 2 eggs
- 1 cup granulated sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 tbsp. lemon juice
Instructions
- Heat oven to 350
- In a large bowl, blend together flour, butter, and confectioner’s sugar. Mix thoroughly.
- Press into square 8x8x2 pan.
- Bake 20 minutes.
- Beat eggs, granulated sugar, baking powder, salt, and lemon juice together.
- Pour mixture over baked crust and bake another 20 to 25 minutes.
- Do not overbake!
- Cut into 16 squares.
Makes 16 squares.
Note: Filling will puff while baking, but flattens when cooled.
