These delicious Meltaway cookies are fun for a party or a quick after snack. They are made with cake flour, rather than all-purpose flour, which adds to their soft, cake-like texture. Their flavor can be changed in a variety of ways- see the note below the instructions for some ideas!
Ingredients
- 1 cup butter or margarine
- 1/2 cup confectioner’s sugar (pre-sifted)
- 1 tsp. vanilla
- 2 1/4 cake flour
- 1/4 tsp. salt
Instructions
- Heat oven to 400.
- Mix together butter, confectioner’s sugar, and vanilla, making sure to blend thoroughly.
- Stir in flour and salt; blend well.
- Drop dough by teaspoonfuls onto ungreased cookie sheet. (Cookie do not spread)
- Bake about 8 minutes- until set but not brown.
- While cookies are warm, dip in confectioner’s sugar.
- Allow cookies to cool thoroughly before enjoying!
Makes approximately 5 dozen cookies
Variations:
Peppermint – as above, but substitute 1 tsp. peppermint extract for vanilla. Add a few drops of green food coloring for added “minty-ness.”
Rum – as above, but substitute 1 tsp. rum for vanilla. Top each cookie with half a candied cherry.
Almond – as above, but substitute 1 tsp. almond extract for vanilla. Top each cookie with a blanched almond before cooking.
Nut – as above, but add 3/4 cup finely chopped nuts of your choice to the dough.
Spicey – as above, but omit vanilla. Add 1/2 tsp. cinnamon, 1/2 tsp. nutmeg, and 1/8 tsp. ground gloves in with flour.
Orange – as above, but omit vanilla. Add 2 tsp. grated orange zest and a few drops of yellow food coloring.
