Oatmeal Raisin Cookies

These classic Oatmeal cookies are a favorite in nearly every household. They are easy to make and taste delicious. You can easily vary this recipe in many ways by leaving out the raisins and nuts. This oatmeal cookies, moist and crunchy, is one of our family favorites.

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1 1/2 cup sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 2 1/2 cups all purpose flour
  • 1/2 ts. baking powder
  • 1 tsp. salt
  • 1 tsp baking soda
  • 1 tsp. cinnamon
  • 1/2 tsp. ground cloves
  • 2 cups rolled oats
  • 1/2 cup chopped nuts

Instructions

  1. Simmer raisins and water over low heat until raisins are plump, approximately 20 to 30 minutes.
  2. Drain raisin liquid into measuring cup.
  3. Add enough water to make 1/2 cup of liquid.
  4. Heat oven to 400.
  5. In a small bowl, blend together flour, baking powder, baking soda, salt, and spices.
  6. In large bowl, mix together shortening, sugar, eggs, and vanilla. Mix well.
  7. Slowly stir in raisin liquid.
  8. Blend in flour mixture well.
  9. Slowly add in rolled oats, nuts, and raisins.
  10. Drop dough by rounded teaspoonfuls of dough about 2″ apart onto ungreased cookie sheet.
  11. Bake 8 to 10 minutes.

Makes 6 to 7 dozen cookies
