Refrigerator Cookie Dough

Ingredients

  • 1 cup shortening
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 eggs
  • 1 1/2 tsp. vanilla
  • 2 3/4 cups all-purpose flour
  • 1/2 tsp. baking soda
  • 1 tsp.  salt

Instructions

  1. In small bowl, combine flour, baking soda, and salt. Set aside.
  2. In large bowl, mix together shortening, sugars, eggs, and vanilla. Blend thoroughly.
  3. Using your hands, slowly mix flour mixture into shortening mixture.
  4. Press and mold dough into a roll approximately 2 1/2″ in diameter.
  5. Wrap with waxed paper.
  6. Chill dough for several hours, or for best results, overnight.
  7. Heat oven to 400.
  8. Cut dough into thin, even slices approximately 1/8″ thick.
  9. Place cookies onto ungreased cookie sheet.
  10. Bake cookies for 6 to 8 minutes, or until lightly browned.

Makes about 6 dozen 2 1/2″ cookies

Variations:

  • Nuts – mix 1/2 cup chopped nuts into dough.
  • Cinnamon 0 use 2 to 3 tsp. cinnamon instead of vanilla
  • Date-Nuts – mix 1/2 cup finely cut dates and 1/2 cup finely chopped nuts into dough.
  • Chocolate – melt & cool 2 squares of unsweetened chocolate (about 2 oz) into shortening mixture before adding dry ingredients
