Ingredients
- 1 cup shortening
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 2 eggs
- 1 1/2 tsp. vanilla
- 2 3/4 cups all-purpose flour
- 1/2 tsp. baking soda
- 1 tsp. salt
Instructions
- In small bowl, combine flour, baking soda, and salt. Set aside.
- In large bowl, mix together shortening, sugars, eggs, and vanilla. Blend thoroughly.
- Using your hands, slowly mix flour mixture into shortening mixture.
- Press and mold dough into a roll approximately 2 1/2″ in diameter.
- Wrap with waxed paper.
- Chill dough for several hours, or for best results, overnight.
- Heat oven to 400.
- Cut dough into thin, even slices approximately 1/8″ thick.
- Place cookies onto ungreased cookie sheet.
- Bake cookies for 6 to 8 minutes, or until lightly browned.
Makes about 6 dozen 2 1/2″ cookies
Variations:
- Nuts – mix 1/2 cup chopped nuts into dough.
- Cinnamon 0 use 2 to 3 tsp. cinnamon instead of vanilla
- Date-Nuts – mix 1/2 cup finely cut dates and 1/2 cup finely chopped nuts into dough.
- Chocolate – melt & cool 2 squares of unsweetened chocolate (about 2 oz) into shortening mixture before adding dry ingredients
