Russian Teacakes


These are favorites at our house. They are simple to make, and taste delicious. Russian Teacakes are known to some as Mexican Wedding Cakes, but this recipe is all Russian!

Ingredients

  • 1 cup butter or margarine
  • 1/2 cup sifted confectioners’ sugar
  • 1tsp. vanilla
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. finely chopped nuts

Instructions

  1. In a large bowl, mix butter, sugar, and vanilla thoroughly (until very smooth).
  2. Slowly stir in flour and salt, blending mixture well.
  3. Add in nuts.
  4. Chill dough at least one hour.
  5. Heat oven to 400.
  6. Roll dough into 1″ balls.
  7. Place on ungreased cookie sheet.
  8. Bake 10 to 12 minutes – do not allow to brown.
  9. While cookies are still warm, roll in confectioners’ sugar.
  10. Allow to cool; then roll in sugar again.

Makes about 4 dozen 1″ cookies.
