Shortbread Cookie


This simple Shortbread cookie recipe is easy to make and so incredibly yummy! In years past, Shortbread was only served at Christmas and New Year’s, but these cookies are great any time of year. Though this is a simple recipe, you can vary the ingredients to change the texture and flavor of your cookies. Just remember, with so few ingredients, you really need to use top quality ingredients to bring out your Shortbread’s flavor!

Ingredients

  • 3/4 cup butter
  • 1/4 cup granulate sugar
  • 2 cups all-purpose flour

Instructions

  1. In a large bowl, mix butter and sugar throughly. The creamier you get this mixture, the better your cookie!
  2. Work flour in with your hands (yes, with your hands!).
  3. Chill dough at least 1 hour.
  4. Heat oven to 350.
  5. Roll dough out to approximately 1/3″ to 1/2″ thick.
  6. Cut into rectangles or fun shapes (leaves, ovals, etc.).
  7. In desired, flute edges by pinching between your fingers (like for pie crusts).
  8. Place cookies onto ungreased cookie sheets.
  9. Bake for 20 to 25 minutes.

Makes approximately 2 dozen 1 1/2″x1″ cookies.

Note: Tops of cookies do not brown during baking so make sure to set your timer! Also note that cookies will retain shapes and not spread.
