Snowflakes are festive, yummy cookies that are perfect for any winter gathering. You will need a cookie cutter to form the snowflakes, or any shaped cookie cutter if you’d rather have differently shaped cookies. Other holiday shapes include bells, Christmas trees, and even reindeer. Of course, you aren’t limited to just making this cookie during the holiday season. Use a leaf-shaped cookie cutter for fall, a football shape for Super Bowl Sunday, or even a baby rattle shape for a baby shower. Tint the frosting with food coloring to match your theme. This is one Christmas cookie recipe that is perfect for anytime of the year!
Ingredients
- 3/4 cup butter (softened)
- 3/4 cup brown sugar (packed)
- 1 egg
- 2 1/4 cups all purpose flour
- 1/2 tsp. baking soda
- 1/4 tsp. salt (omit if you are using salted butter)
Instructions
- Beat together butter and brown sugar until light and fluffy.
- Add egg, making sure to blend well after.
- Slowly add flour, baking soda, and salt. Mix well.
- Divide dough into four equal parts. Shape each section into a flat round.
- Tightly wrap each dough round in plastic wrap.
- Refrigerate until chilled (at least 2 hours- longer will make it easier to cut the dough).
- When dough is chilled, heat oven to 350 degrees.
- Prepare cookie sheets by lining them with parchment paper.
- On a floured surface, roll each section of dough to approximately 1/4″ thick. Work with one dough section at a time, keeping the others in the fridge until you are ready.
- Cut dough with cookie cutter- carefully place cookie onto cookie sheet.
- Bake cookies for 8 to 11 minutes, or until a light golden brown.
- Allow cookies to cool approximately 2 minutes, then remove to cooling racks.
- Cookies should be allowed to cool thoroughly before frosting (allow at least 30 minutes).
Note: Before re-rolling scraps to cut out more cookies, wrap scraps in plastic wrap and allow to chill in fridge for a bit.
Frosting Ingredients
- 1 1/2 tsp. meringue powder
- 1 tbsp. cold water
- 1/2 cup confectioner’s sugar
- Decorative granulated sugar (if desired)
Frosting Instructions
- Beat meringue powder and cold water on medium speed until peaks form.
- Gradually beat in sugar until soft peaks form (takes about 1 minute).
- Spoon frosting into a decorating bad (makes it easier to frost delicate snowflakes).
- Pipe frosting onto cooled cookies.
- Sprinkle with granulated sugar for an extra snowflakey touch.
- Allow cookies to rest while frosting sets (about 5 minutes).
Makes approximately 2 1/2 dozen cookies, depending on the size of your cookie cutter.
